I recently just discovered my love for kale. I had never really tried it before expecting it would have a strong flavor that I didn't like, but it was just the opposite. I don't think it has a strong taste at all. It's more like just a thick, hearty and crunchy lettuce. I love it! When I found this recipe over at The Cheerful Kitchen I knew I needed to try it.
This is a healthy coleslaw that is lightly dressed and filled with good hearty greens! It is made to be used as a side but I could seriously eat this as a salad for lunch one day. It is so good! Oh, and with the grocery stores selling vegetables already pre-sliced and chopped this recipe can be thrown together in less than five minutes!
