Reese's Chocolate Cookie Cups

A friend of mine from work brought these in one day and they changed my life. They are so delicious and super easy to make. However, I do warn you that they are very addicting. You will want to eat the whole pan.

They have that soft, moist, chocolate chip goodness filled with the a chocolatey peanut butter Reese’s. A-mazing! The best part about this recipe is they are quick to make and there’s very little clean up.

Now, don’t judge! I am all about things that are homemade, and technically these are “homemade”. They just aren’t made from scratch. If that’s something you prefer then you most certainly can fill your mini muffin pan with chocolate chip cookies from scratch. But who doesn’t love a good (amazing), easy and quick recipe? All you need for this recipe is a package of ready to bake chocolate chip cookie dough, Reese’s miniature peanut butter cups and a mini muffin pan. For this batch I used Toll House because that’s all the store had but I am definitely more of a Pillsbury fan.

I like to buy the cookie dough that is already cut in squares for you. It makes this recipe that much easier. Spray each muffin hole with Baker’s Joy and  put one square in each one.  Bake them according to the directions on the cookie package.

While the cookies are baking, unwrap enough miniature Reese’s in order to put one on each cookie (and some for you to eat just because).

When the cookies are done immediately place one miniature Reese’s on top of each cookie. Do this gently. You don’t want the Reese’s to tear the cookie cup and sink to the bottom.

Allow the cookie cups to cool in the pan for 5 minutes. Transfer to a cooling rack until cooled. The chocolate will be runny for a few hours. Wait to package until it dries.
***If you are having a hard time getting the cookie cups out of the pan you can place them in the refrigerator until cooled and chocolate has hardened. Then take them out.***

This recipe is definitely a crowd pleaser. The hardest part is trying to not eat them all!

Reese’s Chocolate Chip Cookie Cups

Ingredients:

  • 1 16oz package of Ready to bake chocolate chip cookie dough (I usually buy the ones already cut into squares)
  • 1 mini reese peanut butter cup for each cookie

Directions:

  1. Preheat oven to the temperature stated on the cookie dough directions.
  2. Place one cookie dough square in the holes of a greased mini muffin pan (I use bakers joy and the cookies come out pretty easy).
  3. Bake according to the directions on the cookie dough package.
  4. While the cookies are baking unwrap the mini Reese’s peanut butter cups.
  5. When the cookie cups are done cooking immediately press 1 mini Reese’s peanut butter cup into each cookie.
  6. Allow the cookies to sit in the muffin tin for about 5 minutes then remove them from the pan and transfer to a wire cooling rack and let cool completely.
