This seriously is the easiest pumpkin bread I've ever made. It only has two ingredients and it's super moist and packed with that yummy pumpkin spice flavor.
A friend of mine sent me this recipe this weekend. When I saw it only had two ingredients I knew right away it was something I needed to try. This recipe is so delicious!
The original recipe calls for one box of spice cake mix and one can of pumpkin. I love pumpkin pie spice and cinnamon so I decided to add 1/4 tsp of each to the batter. Delicious! My friend had made little cookies using this recipe instead of a loaf. Both work out well. I am going to make this recipe again and make the cookies for Ava to take to daycare. I plan on making a big batch and freezing them.
To get the spices well blended I added them to the dry cake mix and whisked until blended.
Then I added the pumpkin and stirred until the dry mixture was completely blended. The batter is very thick. There is no mixer needed for this recipe.
The great thing about this recipe is there are no eggs. So Ava was allowed to taste test the batter before putting it into the oven. Needless to say she was a fan!
After the taste testing was complete we spooned the batter into a greased loaf pan. The batter is very thick so I used a spatula to smooth it out. We baked the bread at 350 degrees for approximately 40 minutes.
Then we allowed the bread to cool on a drying rack for about 10 to 15 minutes before removing from the pan.
Now, it was time for a nice warm slice of pumpkin bread. It was so good! I was so impressed that this recipe was that easy yet still packed with tons of flavor.
