This is the BEST homemade pineapple upside down cake! It’s pretty easy to make and it’s flavor will have you wanting to eat the whole thing!
I know that many people make upside pineapple cake using the cake box version which is good too but THIS recipe made from scratch is SO good! If you haven’t tried one from scratch I highly recommend you try this recipe. You won’t regret it and it’s pretty easy to put together.
For the past three years my mother in-law has requested an upside pineapple cake for her birthday. The first year I was nervous because I had never made one before. I had never really been a fan of upside down pineapple cake until I discovered this recipe. The cake is so moist and the brown sugar, buttery topping with the pineapple and cherries is just heavenly! You can find the full recipe here.
Just a few tips…
- Follow the recipe exactly how it says.
- Gently mix the ingredients together until smooth. Mixing the batter to fast or too hard will ruin the moist consistency of the cake.
- Make sure to spoon the flour into the measuring up and then use the flat end of a knife to scrape off the excess flour. NEVER scoop the flour using the measuring cup. This will pack the flour and also have an effect on the consistency of the cake.
NOTE: Tips 2 and 3 are great to follow for any baking recipe.
