ONE. This is one of our favorite ways to cook potatoes. They have crunchy edges and a yummy buttery taste. I’ve included the recipe below.
Smashed Roasted Potatoes
- Preheat oven to 450 degrees F. Line baking sheet with parchment paper. If you don’t have parchment paper you can lightly oil a baking sheet or coat with nonstick spray.
- In a large pot of boiling water, boil one bag of mini golden potatoes. You can keep the potatoes whole. I usually just cut the bigger potatoes in half. Cook potatoes until tender, about 10-15 minutes; drain well.
- Place potatoes onto the prepared baking sheet. Using a potato masher or fork, carefully smash the potatoes until flattened but still in one piece. Top with olive oil or butter and seasonings of your choice. I like to use salt, pepper, garlic powder and dried parsley.
- Place into oven and bake for 18-20 minutes, or until golden brown and crisp.
- Serve immediately.

THREE. It’s getting close to strawberry season here in Florida so I wanted to share the trick to getting your produce to last longer, especially strawberries!
I’ve tried this trick several times now and it WORKS! It’s pretty much a vinegar wash/soak. I put my strawberries in a large bowl and covered them with water and added one cup of white vinegar. I think it ended up being about 5 parts water to 1 part vinegar. You can also use your sink. I let them soak for about 5 to 10 minutes and then let them dry on some paper towels. You don’t want to over soak them. Store in an airtight container in the fridge.
FOUR. So, remember how I shared about Joey and I participating in a Financial Peace University class at our church? Well, that class led to Ava and I meeting these sweet souls. We got together last weekend for a mommy and me morning and have stayed in touch since our class. The girls have so much fun together and their family is just the sweetest! I’m so happy we stuck with the class and got connected.
FIVE. Meet Simon! He’s a therapy dog that hangs out at my new school. Isn’t he the sweetest? The kids have fun reading to him and just seeing him around campus. It brightens my day just to see him and get snuggles and kisses.
SIX. Speaking of my new school! I survived my first week with my new classes. Of course, I have been exhausted all week, but it was fun. I truly love where I’m at. I went to bed around 8:30pm every night this week. I was so tired! It will be nice once I get in the groove of things and then have more time to catch up on my Hallmark Movies!
SEVEN. Zoey received this gift for Christmas and she LOVES it! Every time it comes on she starts dancing to it. It’s the cutest thing. This toy will entertain her for a long time! I’m pretty sure I know all of the songs by heart.
