Healthy BBQ Turkey Meatloaf Cups with Mashed Cauliflower

Turkey Meatloaf Cups

These healthy bbq turkey meatloaf cups are so good! I know the cauliflower mash sounds a little weird. At least it did to me but I am here to tell you it’s true what people say. It is SO good!

I was introduced to this recipe in a 21 day fix challenge group I completed with Julie Nibbe. When I saw all of the ingredients I was a little hesitant. Putting a whole cup of diced carrots in meatloaf was different for me but I told myself to give it a try. I am so happy that I did. This recipe has been one of our favorites ever since.

The ground turkey and cauliflower mash make this meal a healthier option to the traditional ground beef meatloaf and mashed potatoes.  I highly recommend giving it a try. It just might surprise you!
