This black bean, corn and avocado salsa is super easy to make and perfect for your summer cookouts.
I made this salsa the weekend before we had Zoey for our outside lunch that day. We spent the weekend playing in the water in our backyard and enjoying the fresh air. This salsa was perfect for the day and paired well with our fresh summer fruit.
This is a very light salsa and so easy to make. Seriously! That day I pretty much looked in our fridge and pantry to see what I had that I could throw together quickly and this is what I came up with.
I’m pretty sure we ate the whole bowl that afternoon. I recommend pairing this with chips that have a hint of lime to them, if you’re into lime. Oh, so good!
Black Bean, Corn and Avocado Salsa
- Can of black beans
- Cooked corn (I used a bag of steamed corn)
- One to Two fresh avocados diced
- A couple spoonfuls of Trader Joe’s Salsa Verde or any brand of salsa verde will work
Mix all ingredients together. Serve with chips of your choice. I like to use tortilla chips that have a hint of lime.
