Gluten Free Turtle Cookie Bars

We just started taking Ava to the nursery at church on Sundays. Right now, she isn’t very happy about it. She cries the entire time unless someone is holding her. A few weekends ago I thought I would cheer her up by making a special sweet treat for her. I decided to make these delicious turtle cookie bars.

On our way home from church we stopped by Target to gather some baking products. That’s when I stumbled upon the Immaculate Baking Co.. Their gluten free label is what caught my eye. We don’t have a gluten free diet, but some of our friends have children that are allergic to gluten. I have also heard many positives about staying away from gluten.

​After discovering the Immaculate Baking Products I wanted to give them a try. I am so happy that I did! The cookie mix I used for my turtle cookie bars was so delicious. I couldn’t even tell it was gluten free!

These Turtle Cookie Bars are so yummy. They have a cookie crust with a toasted pecan and chewy salted caramel center. ​

The Immaculate Cookie Mix is super easy and has all the dry ingredients already mixed for you. All you have to add is the wet ingredients listed on the back of the box.

To make these cookie bars I toasted the pecans in the oven while I prepared the cookie mix.

Then I covered the bottom of a 8×8 with foil and non stick baking spray. I spread half of the cookie batter on top of the foil. ​

Next, I prepared the caramel and layered it on top of the cookie layer.

After that I sprinkled the pecans on top of the caramel.

Then I added the rest of the cookie dough and baked the cookie bars on 350 degrees for 30 minutes.

After they were done baking I sprinkled sea salt on top and let them cool before cutting.

Then we enjoyed some warm turtle cookie bars! These cookie bars definitely cheered Ava up!

Immaculate Thanksgiving Treat: Turtle Cookie Bars {Gluten Free}

Ingredients:

  • 1 box Immaculate Baking Cookie Mix
  • 1 stick butter
  • 1 egg
  • 1 tsp vanilla (gluten free)
  • 1 cup toasted pecans
  • 11 oz soft caramels unwrapped
  • 3 tbsp heavy cream
  • sea salt

Directions:

  1. Preheat the oven to 350 degrees.
  2. Line an 8×8 baking dish with foil and coat completely with nonstick spray.
  3. Spread the pecans on a baking sheet and bake for 5 minutes on 350 degrees.
  4. Prepare the Immaculate Cookie Mix according to the directions on the box.
  5. Press half of the cookie dough evenly into the baking dish.
  6. Add the caramels and heavy cream in a microwaveable safe container. Microwave in 30 second increments until the caramel is completely melted and creamy.
  7. Pour caramels over the cookie dough.
  8. Sprinkle the toasted pecans on top of the caramel.
  9. Drop remaining cookie dough over the caramel by the tablespoon.
  10. Bake bars in the oven for 30-35 minutes, until they are golden and the center is just set.
  11. Sprinkle sea salt over the top and allow bars to cool.
  12. Remove bars from the pan with the foil and cut and serve.
